Mushroom Cooking: Theory, Practice & Taste Testing

Prepare for the coming mushroom season by joining Dr. Walker in the commercial kitchen at Cabrillo College to learn how to clean, prepare, and cook a variety of cultivated and wild mushrooms, and how to make sure your mushrooms are edible and safe to eat. Learn the theory of mushroom cookery, then put your new knowledge into practice by preparing Butter Basted Mushroom “Scallops”, Candied Shiitakes, Mushroom “Ceviche”, Asian style mushroom pancakes, and a few special surprises! You will use a selection of cultivated and possibly foraged mushrooms collected by Dr. Walker. You will come away from this class with solid fundamentals and methods for how to cook different types of mushroom varieties.
Techniques you will learn include but are not limited to: mushroom knife skills, dry sauteing, searing mushrooms, steaming, boiling, and preservation techniques.

Class is limited to only 12 students, so register early! Students must wear long pants and closed toed shoes, and be prepared to tie your hair back or wear a hat in the kitchen. Also, please dress for the weather so you can stay warm and dry for the brief walk before you start in the kitchen and classroom!

Please note the following guidelines for culinary classes:

Students must wear their hair tied back, or in a bandana during class.

Students may not use cell phones during class.

Students must wear closed toed shoes and long pants.

Parking is enforced 7 days a week on the Cabrillo Campus. Please carefully read the signage in areas where you park. Daily parking permits are $4.00 and can be purchased in any of the student parking lots from parking permit dispensers. Daily permits are only good for the date of purchase. Permit dispensers only accept credit and debit cards, no cash.
