Summer Mushroom & Vegetable Galette, Muhammara, and Ceviche

ClassGraphic A galette is a rustic, freeform tart made with a flakey, buttery pie crust, and filled with just about anything you like. Learn to make and roll out the crust, fill it, and and bake your galette with a savory mushroom and vegetable filling with a touch of goat cheese to add creaminess.  This galette is a wonderful center of a summer meal, and you’ll also learn to make a vegetarian oyster mushroom ceviche that you can serve alongside it. The same techniques you learn for the galette work for almost any savory or sweet filling you can dream up. You’ll also make an addictively good version of a middle eastern walnut and roasted pepper dip, called Muhammara, using locally grown mushrooms as a base.
You will take home your own galette that serves a couple, and a generous couple portions of Muhammara. 
Chad will have his new cook book, The Mushroom Hunter's Kitchen, available for purchase after class!

Students must wear closed toed shoes and long pants, and may bring their favorite apron.
