Cream Puffs, Eclairs, and Custard Filled Swans

Join Chef Stephany in Cabrillo’s Bakeshop to learn the art of making a delicate, silky-smooth pate a choux dough, used to create our favorite pastries; cream puffs, eclairs, and the iconic swan shape.  The fillings will be fresh whipped cream and a rich custard, topped with a chocolate ganache. Everyone will be waiting for your return home with a box full of these delights! Students will work in two-person groups to complete recipes, so come prepared to make some new friends!
Students must wear closed toed shoes and long pants, and may bring their favorite apron.

Please wear long pants, closed-toed shoes, and bring your favorite apron if you’d like! Students may bring their favorite kitchen knife to class, or loaner knives will be available for anyone who doesn’t have or want to bring their own. Students will work in two-person groups to complete recipes, so come prepared to make some new friends!

Parking is enforced 7 days a week on the Cabrillo Campus. Please carefully read the signage in areas where you park. Daily parking permits are $4.00 and can be purchased in any of the student parking lots from parking permit dispensers. Daily permits are only good for the date of purchase. Permit dispensers only accept credit and debit cards, no cash.
