ClassGraphic Your knife is the most useful tool in your kitchen! Knife cutting is a lifelong skill, and cutting correctly will add ease to your prep, save time, prevent accidents, and make the whole experience of cooking more enjoyable! Learn cutting skills and techniques, the importance of selecting and caring for your knife, and how to handle your knife with confidence and accuracy. Megan will demonstrate and guide you through the proper technique to chop, dice, and mince - all cuts that are utilized every day, and especially in professional commercial kitchens. There will be demonstrations and plenty of time for practice! As an added bonus, after class you will know what chiffonade, brunoise, julienne, and other knife cut names mean, and why they are used. You will go home with an array of cut vegetables prepared during class.

You may bring your favorite kitchen knife to class, or loaner knives will be available for anyone who doesn’t have or want to bring their own.

Please wear long pants, closed-toed shoes, and bring your favorite apron if you’d like!

Please note the following guidelines for culinary classes:

Students must wear their hair tied back, or in a bandana during class.

Students may not use cell phones during class.

Students must wear closed toed shoes and long pants.

Students may bring their favorite kitchen knife to class, or loaner knives will be available for anyone who doesn’t have or want to bring their own.

Parking is enforced 7 days a week on the Cabrillo Campus. Please carefully read the signage in areas where you park. Daily parking permits are $4.00 and can be purchased in any of the student parking lots from parking permit dispensers. Daily permits are only good for the date of purchase. Permit dispensers only accept credit and debit cards, no cash.
