« back to classes page
ClassGraphic Learn how to make a lasagna that’s as nourishing as it is delicious—crafted entirely from fresh, local, gluten-free, dairy-free, and nightshade-free ingredients. Anti-inflammatory, packed with flavor, and deeply satisfying, this lasagna is a wholesome twist on a beloved classic. In this hands-on class, you’ll gain lifelong cooking skills as you transform vegetables into pasta, whip up a magical no-mato sauce, and create plant-based ricotta and parmesan from whole-food ingredients. You’ll layer noodles, sauce, herbs, and roasted veggies into a dish that’s perfect for feeding a crowd, sharing with loved ones, or treating yourself to something truly special. This lasagna is make-ahead friendly, table-talk worthy, and guaranteed to impress. We’ll end class by enjoying a hearty meal together, and you’ll go home with a pint of your own no-mato sauce in a reusable glass mason jar to keep the goodness going.
Students must wear closed toed shoes and long pants, and may bring their favorite apron.
