ClassGraphic Neapolitan style pizza was invented in Naples, Italy and made the whole world fall in love with pizza. It is known for its simplicity. It’s not about topping your pizza with as many things as possible, but about finding the freshest ingredients, creating the perfect ratio of dough, sauce, cheese, and toppings, then enjoying the results - a perfect taste and texture. You will learn the seven basic guidelines according to the Associazione Verace Pizza Napoletana. First learn how to make high hydration pizza dough, how to bulk ferment, and how to make dough balls. This method will allow you to produce dough with lots of flavor! Then learn how to shape each pizza and bake a true “Pizza Napoletana” from the fresh dough Chef Yana has prepared for class. Finally, Chef Yana will bake your pizza outside in her Gozney Roccbox portable outdoor pizza oven, and then box it up for you to take home.
You will take home your delicious 10-inch Pizza Napoletana with a leopard spotted crust - a sure sign that it was baked in a very hot oven, and Yana’s tips and tricks for using a portable pizza oven.

Students must wear closed toed shoes and long pants, and may bring their favorite apron.

Notice

Please read:  Laminated recipes are available for group-use only in the kitchen, and are not available to take home. Students who wish to have recipes on hand during class will receive the recipe link upon registration so they can print them before class.

Please note the following guidelines for culinary classes:

Students must wear their hair tied back, or in a bandana during class.

Students may not use cell phones during class.

Students must wear closed toed shoes and long pants.

Students may bring their favorite kitchen knife to class, or loaner knives will be available for anyone who doesn’t have or want to bring their own.

Parking is enforced 7 days a week on the Cabrillo Campus. Please carefully read the signage in areas where you park. Daily parking permits are $4.00 and can be purchased in any of the student parking lots from parking permit dispensers. Daily permits are only good for the date of purchase. Permit dispensers only accept credit and debit cards, no cash.
