Learn to make two classic recipes for French tartelettes using fresh summer ingredients. You will prepare two types of tartelettes, lemon and Italian meringue, and a berries and cream tartelettes made with fresh local berries. You will begin by learning how to make a classic sweet pastry dough, including the proper technique for rolling the dough, and how to place it inside the tiny pastry tins. In addition to the classic sweet pastry dough, you will learn to prepare three individual recipes as part of each tartelettes; an Italian meringue, a basic lemon curd, and a sweet pastry cream. You will go home with recipes and a box of your beautiful, fresh single serving 6”-8” tartelettes!
Students must wear closed toed shoes and long pants, and may bring their favorite apron.
