Learn to prepare vegan and vegetarian Hosomaki (thin roll) sushi rolls, prepare and season Japanese sushi rice, and make sushi vinegar, as you learn about Edomae style Japanese cuisine, Japan's original fast food. Near the end of the Edo Era a sushi chef from Edo (now called Tokyo), came up with the idea of bite-size pieces of fish atop vinegared rice, which could then be quickly served to passing travelers. Chef Yana will also demonstrate how to sharpen Japanese knives, and you will have the opportunity to develop your knife skills to cut vegetables.  You will take home three sushi rolls, some side dishes (like edamame and pickled veggies), your new Japanese knife skills, and recipes to prepare more delicious Edomae style Japanese cuisine at home!
Students must wear closed toed shoes and long pants, and may bring their favorite apron.
